Egg Casserole Recipe

Meal prep must be quick + easy if you ask me! Scroll down for my healthy, quick, and easy Egg Casserole recipe. Not only is it delicious and versatile, but it will only take you 10 minutes or less to prep! This is a great dish to make on Sunday and eat through out the week.


4 eggs

4 liquid egg whites

1 1/2 cups 1% milk

1 pkg Jimmy Dean Turkey Sausage Crumbles or 1lb browned turkey sausage

1/2 bag frozen diced hash browns (30oz bag)

1 cup shredded cheese

1 1/2 tsp salt

1 tsp black pepper

1/4 tsp garlic powder


  • Preheat oven to 375 and spray 9 x 13 pan with non stick cooking spray.

  • Whisk eggs, milk, spices together in a bowl

  • Layer ingredients in a casserole dish. Start with adding your thawed hash browns, precooked sausage, layer of cheese, and then pour on whisked egg mixture.

  • Cover with foil. Bake for 40 minutes, remove foil, and then bake for another 15 minutes.

Yields 8-12 servings. Top with salsa and serve with a side of fruit or eat inside a high fiber wrap breakfast burrito style.
